This back-to-school season, Faubourg Daimant is teaming up with chef Cheynese, recently spotted at the helm of Chop Chop, for a gourmet collaboration around one dish: Peking-style glazed oyster mushrooms inspired by Peking duck. Available exclusively at this cool vegan hotspot that reinterprets bourgeois cuisine with its own twist, this four-hand creation will be served from September 10 to 24, 2024. Between the wheat pancakes to be filled with BBQ oyster mushrooms, enhanced with hoisin sauce and toasted sesame aioli, and the reinterpreted Belle Époque ambiance – marble, velvet, and elegant glass roof – the experience promises to delight the senses, while affirming a committed vision of contemporary gastronomy.
